Peazzazz Salad 

 

One of the side dishes my family looks forward to most during family gatherings is "Mom's Famous Pea Salad." I simply took a traditional (albeit, somewhat boring) dish and added my own southern pizzazz in order to take it from ho-hum to "don't show up without the pea salad."

 

VERY gently fold together:

One 8.5 oz can of peas (fully drained)

½ cup of finely sliced celery

½ cup of finely chopped sweet pickles

½ cup of sliced green olives

1 cup of diced ham

¼ cup of finely chopped red onion (optional)

Thoroughly Chill Ingredients.

 

Right before serving, fold in:

½ cup cheddar cheese (cut into pea size bites)

Mayonnaise to taste

 

Side dish serves: 6-8 people
